Ingredients
  

  • 4 cups long-rain parboiled rice
  • 500 g Turkey thighs or wings, cut into chunks
  • 500 g chicken, cut into pieces
  • 1 cup chicken stock (from cooking the turkey or chicken)
  • 1 cup carrot, diced
  • 1 cup green beans, sliced
  • ½ cup sweet corn
  • ½ cup green peas
  • 1 medium onion, finely chopped
  • 3 tsp vegetable oil
  • 2 tsp butter or margarine
  • 1 tsp curry powder
  • ½ teaspoon thyme
  • ½ teaspoon white pepper or black pepper
  • 2 seasoning cubes
  • salt to taste
  • 2 spring onions, sliced (for garnish)

Method
 

  1. Rinse the rice thoroughly and parboil in lightly salted water for 5–7 minutes; drain and set aside.
  2. Season the turkey thighs or wings with salt, pepper, thyme, curry powder, and one seasoning cube, then cook until tender; reserve the stock.

  4. Heat vegetable oil and butter in a large pan or wok over medium heat.
  5. Add chopped onions and sauté for 1–2 minutes until fragrant.

  7. Add carrots, green beans, peas, and sweet corn to the pan; stir-fry for 3–4 minutes to keep vegetables crisp.
  8. Add curry powder, thyme, pepper, remaining seasoning cube, and salt; mix well.
  9. Stir in the parboiled rice and gradually add chicken stock, mixing thoroughly.
  10. Return turkey chunks and cut chicken pieces to the pan; stir gently to combine.
  11. Cover and cook on low heat for 5–8 minutes until rice absorbs flavour without becoming soggy.
  12. Garnish with spring onions (optional), fluff gently, and serve hot.

  • 60 g 6 -7 slices baguette
  • 50 g butter, softened
  • 2 cloves garlic, minced

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes until softened.
  2. Stir in garlic and red bell pepper, cooking for 1 minute until fragrant.
  3. Add smoked paprika, cumin, chilli powder, and tomato purée. Stir well and cook for 1 minute.
  4. Add kidney beans, chopped tomatoes, and vegetable stock. Bring to a boil.
  5. Reduce heat and simmer uncovered for 25 minutes, stirring occasionally. Season with salt and black pepper.
  6. Meanwhile, preheat oven to 200°C (180°C fan).
  7. Mix butter and garlic, then spread evenly over the baguette and sprinkle with cheese.
  8. Bake for 10–12 minutes until golden and bubbly.

Ingredients
  

  • 900 g (2lb) beef chuck cut into 4 cm (1½-inch) cubes
  • ½ teaspoon salt to taste
  • ½ teaspoon freshly ground black pepper to taste
  • 2 tbsp olive oil
  • 150 g (5 oz) bacon lardons or diced streaky bacon
  • 1 large onion, finely chopped
  • 2 medium carrots, sliced
  • 3 cloves garlic, minced
  • 2 tbsp tomato puree
  • 2 tbsp plain flour
  • 750 ml (3 cups) dry red wine (Burgundy or Pinot Noir preferred)
  • 500 ml (2 cups) beef stock
  • 1 bay leaf
  • 1 teaspoon dried thyme (or 2 springs fresh thyme)
  • 225 g (8 oz) button mushrooms, halved
  • 1 tbsp butter
  • chopped fresh parsley, for garnish

Method
 

  1. Season the beef cubes generously with salt and pepper.
  2. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  3. Brown the beef in batches until well seared on all sides, then remove and set aside.
  4. In the same pot, add the bacon and cook until lightly crisp. Add the onion and carrots and sauté for 5 minutes until softened.
  5. Stir in the garlic and tomato purée and cook for 1 minute until fragrant.
  6. Sprinkle the flour over the vegetables and bacon, stirring well to coat. Cook for 1–2 minutes to remove the raw flour taste.
  7. Slowly pour in the red wine, scraping the bottom of the pot to release any browned bits.
  8. Add the beef stock, bay leaf, thyme, and browned beef. Bring to a gentle boil, then reduce heat to low.
  9. Cover and simmer for about 2½ hours, stirring occasionally, until the beef is very tender and the sauce has thickened.
  10. In a separate pan, melt the butter over medium heat and sauté the mushrooms until golden.
  11. Stir the mushrooms into the stew during the last 10 minutes of cooking. Adjust seasoning with salt and pepper.
  12. Remove the bay leaf, garnish with fresh parsley, and serve hot.
