Ingredients
  

  • 200 g Diced beef
  • 300 g Wild rocket leaves washed and dried
  • 300 g Cherry tomatoes halved
  • 1 tbsp 1 tablespoon olive oil (for cooking the meat)
  • ½ teaspoon Salt
  • ½ teaspoon Garlic powder
  • ¼ teaspoon Black pepper
  • 1 tbsp balsamic vinegar1 tablespoon extra-virgin olive oil (for dressing)

Method
 

  1. Heat 1 tablespoon olive oil in a pan over medium heat, and add the diced beef.
  2. Season with salt, pepper and garlic powder. Cook for 6 – 8 minutes, stirring occasionally until browned and fully cooked. Set aside to cool slightly.
  3. In a large bowl, add rocket leaves,
  4. and cherry tomatoes
  5. Add the cooked diced beef to the bowl containing the rocket leaves and cherry tomatoes.
  6. Drizzle with balsamic vinegar and 1 tablespoon extra-virgin olive oil.
  7. Toss gently to coat all ingredients evenly.
  8. Serve immediately, topped with optional shaved Parmesan or feta.
