Heat 1 tablespoon olive oil in a pan over medium heat, and add the diced beef.
Season with salt, pepper and garlic powder. Cook for 6 - 8 minutes, stirring occasionally until browned and fully cooked. Set aside to cool slightly.
In a large bowl, add rocket leaves,
and cherry tomatoes
Add the cooked diced beef to the bowl containing the rocket leaves and cherry tomatoes.
Drizzle with balsamic vinegar and 1 tablespoon extra-virgin olive oil.
Toss gently to coat all ingredients evenly.
Serve immediately, topped with optional shaved Parmesan or feta.
