Nigerian Special Fried Rice

Colourful, fragrant and loaded with mixed veggies, liver or shrimp. This dish is a celebration of staple and pairs perfectly with fried chicken or grilled Turkey thighs.

Ingredients
  

Turkey Preparation
  • 2,800 g Turkey thighs
  • 1 Chopped onion
  • 1 teaspoon Ground ginger
  • 4 cloves Ground garlic
  • teaspoons Salt
  • 2 Cubes Knorr or Maggi
  • 1 tbsp Medium curry powder
  • 1 tbsp Dried thyme
  • 1 cup Water
  • 1 tbsp Fresh Rosemary My special secret for tasty Turkey.
  • ½ teaspoon Chicken seasoning
  • ¼  teaspoon Salt
  • 1 teaspoon White pepper
  • 1 tbsp Onion powder
To Cook Rice
  • 800 g Parboiled rice = 4 cups of rice
  •   2 ½  cups Stock from cooked Turkey
  •   1 ½  cups Water
  •  ½  teaspoon Salt
  • 1 teaspoon Curry powder
  •   ½  teaspoon White pepper

Method
 

  1. Divide Turkey thighs into two and put half into a pot.  
  2. Season Turkey thighs with thyme, rosemary, curry powder and knorr or maggi cubes and salt. Cook on slow heat without adding water and after steaming, add water to the pot, then turn up the heat and continue cooking for 14 - 18 minutes.
  3. Now remove the cooked Turkey thighs from the pot and set it aside. Sieve the stock to remove the remnants of seasonings used for cooking.
  4. Heat up some oil in a suitable pan, place the cooked Turkey and fry turning each thigh until brown. Remove fried thighs to a strainer lined with kitchen towel to drain any excess oil.
Prepare Turkey Pieces
  1. Debone the remaining half of Turkey thighs and cut the boneless into small cubes. Place in a pot and season with salt, knorr or maggi cubes, garlic powder, onion powder and pepper.
    Mix well and set aside for later.
Boil Rice
  1. To avoid rice sticking together, rinse under running cold water until the water runs clear and drain to remove excess water. This will remove excess starch.
    Add the washed rice and the Turkey stock to a pot, add, water, salt, curry powder, and white pepper. Mix well, then cover to cook for about 18 - 20 minutes, stir rice to release steam and stop any further steaming.
VegetablesTurkey Pieces
  1. Dice carrot, green bell pepper, green beans, spring onions into small pieces and drain sweetcorn and peas, set aside.
    Heat a small amount of oil in a large pan, add the marinated Turkey pieces and fry in batches until slightly browned. Remove from the pan and set aside.
  2. Add more oil to the pan if required. Start with the white part of the spring onion, then add diced green beans, carrots, stir for maybe 3 minutes until slight soft. Add grind scotch bonnet pepper, then stir in the peas and sweetcorn and stir for few more minutes. Add diced green bell pepper and stir briefly to retain its crunch and then add seasoning, salt, white pepper and mix well.
Final Stage
  1. Add cooked rice to a large pan, add the fried Turkey pieces and stir for a couple of minutes, stirring to prevent burning at the bottom of the pan. This should take about 3 - 5 minutes, remove from heat and serve hot.
