Ingredients
  

  • 2 cups Shredded cooked chicken
  • 1 tbsp Olive oil
  • 1 cup Enchilada sauce or 1 can or chopped tomatoes
  • 8 wraps Corn tortillas
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1 cup Shredded mozzarella cheese
  • ½ small Diced onions
  • 2 cloves Garlic
  • 1/4 cup Chopped cilantro also known as Coriander
  • 1 large Bell Pepper chopped
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon Oregano
  • 1 teaspoon Ground Cumin
  • pinch Salt
  • pinch Pepper

Method
 

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Lightly grease a baking dish.
  2. Cook the Filling: Heat olive oil in a pan over medium heat. Add onion, garlic, and bell pepper; sauté until softened, about 4–5 minutes.
  3. Add Chicken & Spices: Stir in the shredded chicken, cumin, smoked paprika, chili powder, cayenne, oregano, salt, and pepper. Mix well to coat.
  4. Add Sauce: Pour in half of the chopped tomatoes or enchilada sauce. Stir and simmer for 5 minutes until slightly thickened.
  5. Prepare Tortillas: Warm tortillas slightly to make them easier to roll.
  6. Assemble Enchiladas: Spoon chicken mixture into each tortilla, sprinkle with a little cheese, roll tightly, and place seam-side down into the baking dish
  7. Top with Sauce & Cheese: Pour the remaining sauce over the enchiladas and sprinkle generously with the remaining cheese.
  8. Bake: Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Serve: Garnish with fresh coriander/cilantro and serve with sour cream and lime wedges if desired.

  • Add black beans or sweetcorn to the filling for extra texture.

Ingredients
  

  • 9 lasagne sheets
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 lb bulk Italian sausages
  • 15 oz cans tomato sauce
  • 16 oz can sliced mushrooms – drained
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 15 oz container ricotta cheese or alternative – cottage cheese
  • 3 large eggs beaten
  • 1/2 cup grated Parmesan cheese
  • 1 lb shredded mozzarella cheese

Method
 

  1. First preheat the oven to gas marked 175C degrees (350 F degrees)
  2. Cook ground beef and sausage in a large pot over medium heat; drain. Stir in tomato sauce, mushrooms, garlic salt, oregano, thyme, and basil; season with salt and black pepper. Simmer 30 minutes.
  3. Add salt, water and olive oil to a large pot and boil. Then cook the lasagne sheets in the boiling water until soft – about 7 – 9 minutes, drain and set aside.
  4. Add together ricotta cheese (or its alternative), eggs, and Parmesan cheese in a bowl.
  5. Put a thin layer of meat sauce at the bottom of a baking tray or dish, followed with 3 layer lasagne sheets over top. Spread a 1/3 ricotta cheese mixture over sheets; sprinkle a 1/4 mozzarella cheese on top. Scoup 1/3 meat sauce over mozzarella cheese, repeat layering 2 times more and finish with remaining mozzarella cheese.
  6. Put in the preheated oven and bake until cheese melts and sauce bubbles for one and half hours. To prevent from burning, cover lasagne with foil.
  7. Let sit before serving for 10 to 15 minutes.

Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 boneless, skinless chicken breasts 9or 6 thighs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian herbs
  • 1 small onion finely diced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup double cream or (heavy cream)
  • 1/2 cup crated parmesan cheese
  • 1 tbsp tomato paste
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh parsley (optional for garnish)
  • 1 cup long-grain white
  • 2 cups water or chicken broth
  • 1/2 teaspoon salt
  • 1 teaspoon butter (optional)

Method
 

  1. Prepare the Rice: Rinse the rice under cold water until the water runs clear. Add rice, water (or broth), salt, and butter to a medium saucepan. Bring to a boil, cover with a tight lid, then reduce heat to low and simmer for 15 minutes. Remove from heat and let sit—covered—for 5 minutes. Fluff with a fork and set aside.
  2. Season the Chicken: Pat chicken dry and season both sides with salt, pepper, garlic powder, smoked paprika, and Italian herbs.
  3. Sear the Chicken: Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and sear 4–5 minutes per side until golden. Remove to a plate (it will finish cooking later).
  4. Build the Sauce: In the same skillet, reduce heat to medium and add diced onion. Sauté 3 minutes until softened.
  5. Stir in garlic, tomato paste, and Dijon mustard; cook 1 minute until fragrant. Pour in chicken broth and bring to a gentle simmer, scraping up any browned bits.
  6. Add the Creaminess: Stir in the double cream and Parmesan until smooth and slightly thickened.
  7. Finish the Chicken: Return the chicken to the pan, nestling it into the sauce. Cover and simmer 10–12 minutes until the chicken is fully cooked (internal temp 75°C / 165°F).
  8. Serve: Spoon the creamy “magic” chicken and sauce over the fluffy rice. Sprinkle with parsley if desired.

  • Make it one-pan: Add 1 cup of uncooked rice + 2 cups broth directly to the skillet with the sauce and cook covered for 18–20 minutes.
  • Add veg: Spinach, mushrooms, or cherry tomatoes can be stirred in during the last 5 minutes of cooking.
  • Swap protein: Use turkey cutlets, prawns, or boneless pork chops.
  • Extra flavour: Add a pinch of chilli flakes or 1 teaspoon lemon juice for brightness.
  • Lighten it up: Use half cream + half milk and reduce Parmesan slightly.
