Ingredients
  

  • 500 g pack of minced lamb or 1lb ground lamb
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp cumin
  • 1 teaspoon paprika
  • 400 g tin chopped tomatoes
  • 4 large eggs
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground turmeric
  • pinch salt and black pepper to taste
  • 2 tbsp tomatoes paste
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup water or low sodium beef broth
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh parsley, chopped
  • couscous, to serve

Method
 

  1. Heat olive oil in a large skillet or shallow Dutch oven over medium heat. Add onion and cook until soft and translucent, about 5 minutes.
  2. Stir in garlic, cumin, paprika, coriander, cinnamon, turmeric, and cayenne; cook until fragrant, about 30 seconds.
  3. Add ground lamb, season with salt and pepper, and cook until browned, breaking it up with a spoon, about 6 to 8 minutes.
  4. Stir in crushed tomatoes, tomato paste, and water or broth. Bring to a simmer, then reduce heat to low and cook uncovered for 20 minutes, stirring occasionally.
  5. Stir in cilantro and parsley. Taste and adjust seasoning as needed.
  6. Using a spoon, make four small wells in the sauce and crack one egg into each well.
  7. Cover and cook until egg whites are set but yolks are still soft, about 6 to 8 minutes.
  8. Remove from heat and serve hot with some crusty bread or couscous. straight from the pan.

Optional Tips/Variations

Serve with crusty bread or warm pita to scoop up the sauce.
Substitute ground beef or a beef-lamb blend if preferred.
Add green olives or chickpeas for extra texture and flavor.
For firmer yolks, cook the eggs an additional 2 to 3 minutes.

Ingredients
  

  • 1 large onion, finely chopped
  • 2 tbsp olive oil
  • 400 g kidney beans, drain and rinsed
  • 400 g tin chopped tomatoes
  • 750 ml vegetable stock
  • 400 g tin butter beans, drained and rinsed
  • 1 clove garlic, minced
  • 1 tbsp tomatoes puree
  • 1 medium red bell pepper, diced
  • 1 teaspoon mild chilli powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt and black pepper to taste
  • fresh coriander or parsley, chopped for garnish
Method for Cheesy Garlic Bread
  • 60 g 6 -7 slices baguette
  • 50 g butter, softened
  • 2 cloves garlic, minced
  • 100 g grated Cheddar or Mozzarella cheese
  • 1 tbsp fresh parley, chopped

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes until softened.
  2. Stir in garlic and red bell pepper, cooking for 1 minute until fragrant.
  3. Add smoked paprika, cumin, chilli powder, and tomato purée. Stir well and cook for 1 minute.
  4. Add kidney beans, chopped tomatoes, and vegetable stock. Bring to a boil.
  5. Reduce heat and simmer uncovered for 25 minutes, stirring occasionally. Season with salt and black pepper.
  6. Meanwhile, preheat oven to 200°C (180°C fan).
  7. Mix butter and garlic, then spread evenly over the baguette and sprinkle with cheese.
  8. Bake for 10–12 minutes until golden and bubbly.
  9. Ladle soup into soup bowls, garnish with fresh parsley, and serve hot with cheesy garlic bread.

Ingredients
  

  • 4 tbsp extra virgin olive oil
  • 2 medium white onion, diced
  • 4 medium carrots, diced
  • 3 large celery stalks, diced
  • 5 cloves garlic, minced
  • 2 teaspoon fresh thyme
  • teaspoon dried oregano
  • 3 medium  Maris Pipers or King Edwards potatoes, diced
  • pinch red and black pepper
  • pinch salt
  • 1 tbsp tomato paste
  • 9 cups vegetable stock
  • 1 can chop tomatoes
  • 1 cup frozen peas
  • 1 cup frozen sweetcorn
  • 2 cups baby spinach
  • 1/2 cup chopped fresh parsley
  • 1 tbsp red wine vinegar
  • 1/4 cup fresh parsley, chopped for serving

Method
 

  1. In a large pot, heat the oil over medium heat. Add the onions, carrots and celery and cook, stirring occasionally, until the vegetables are crisp-tender, about 12 minutes. Add the garlic, thyme, oregano, red pepper, salt and black pepper; cook garlic for about 1 minute.
  2. Add the potatoes and tomato paste and cook, stirring often, until the tomato paste begins to brown on the bottom of the pot for about 3 to 4 minutes.
  3. Add in the vegetable stock and diced tomatoes with their juices and bring to a boil over medium-high heat. Lower the heat and simmer, partially covered, until the potatoes are tender, 20 to 28 minutes.
  4. Stir in the green beans, corn and peas, return to a simmer and cook until the green beans are tender, for additional 4 to 5 minutes more.
  5. Turn off the heat, add the spinach, parsley and vinegar, stirring until the spinach is slightly cooked. Taste and season with salt and pepper, if desired.
  6. Serve hot, topped with more parsley.
