Ingredients
  

  • 200 g plain flour
  • 350 ml milk
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 teaspoon sugar
  • vegetable oil for frying
  • For serving: few strawberries, cut into two, few blueberries and honey

Method
 

  1. Whisk the milk and eggs in a jug, then set aside.
  2. Sieve the flour and the baking powder into a bowl, add a pinch of salt, the sugar and combine.
  3. Make a well in the centre and gradually pour in the milk and egg mixture.
  4. Beat well. Brush a non-stick frying pan with a little vegetable oil and place over a medium heat.
  5. When the pan is hot, pour half a ladle of batter into the pan to form a pancake that is approx. 10cm in diameter.
  6. Cook until bubbles start to form, then flip the pancake over and cook the other side until golden.
  7. Serve with a few strawberry cut into two, couple of blueberries and drizzle of honey.

Notes

Tips
  • Make sure that you use the baking powder as this helps the pancakes to rise.
  • Do not overmix the batter to prevent the pancakes from being tough.
  • The frying pan should be hot but not too hot before pouring in the batter to all the pancake to cook but not burn.
  • You can swap honey drizzle with maple syrup.
  • Children love chocolate or jam spread

Ingredients
  

  • 1 large cauliflower cut into florets
  • 500 ml whole milk
  • 40 g butter
  • 40 g plain flour
  • 15 g fresh baby spinach, roughly chopped
  • 1 teaspoon Dijon mustard
  • pinch salt to taste
  • pinch black pepper to taste
  • fresh parsley, roughly chopped
  • 2 tbsp breadcrumbs (optional)
  • 25 g extra grated Cathedral City Mature Cheddar cheese for topping

Method
 

  1. Preheat the oven to 200°C (180°C fan). Lightly grease a baking dish.
  2. Bring a large pot of salted water to a boil and cook the cauliflower florets for 5 minutes until just tender. Drain well and set aside.
  3. Melt the butter in a saucepan over medium heat, then stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens and becomes smooth.
  5. Remove from heat and stir in the cheddar cheese, Dijon mustard, salt, and black pepper until melted.
  6. Place the cauliflower into the prepared baking dish and pour the cheese sauce evenly over the top.
  7. Sprinkle with breadcrumbs and extra cheese, if using.
  8. Bake for 20–25 minutes until golden and bubbling.
  9. Sprinkle chopped parsley on top and serve hot.

Notes

Optional Tips / Variations

  • Add cooked bacon or ham for extra flavour
  • Mix in steamed broccoli or leeks for a vegetable twist
  • Use Gruyère or Red Leicester instead of cheddar
  • Add a pinch of nutmeg to the cheese sauce for warmth

  • 150 g self-raising flour
  • 2 large fresh eggs

  • 1 teaspoon vanilla extract
  • 2 tbsp honey
  • 2 tbsp rapeseed oil (1 tbsp for frying) or 1 tbsp olive oil or melted butter
  • 1 cup blueberries or 150g
  • 1 tbsp maple syrup for drizzling
  • 1 cup serve with blueberry juice

Method
 

  1. In a large bowl, place flour.
  2. In a separate bowl, whisk buttermilk, eggs, honey, and vanilla extract until well combined.
  3. Pour the wet ingredients into the flour and gently stir until just combined; do not overmix.
  4. Fold in 3/4 cup of the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease.
  6. Pour about 1/4 cup of batter per pancake onto the skillet and cook until bubbles form on the surface, about 2–3 minutes.
  7. Flip and cook until golden brown and cooked through, about 2 minutes more.
  8. Serve pancakes warm, spoon blueberry juice over the top, and drizzle lightly with maple syrup.
